Question:
Is it fine to read رب زدني علما as the Dua after durood Ibrahim in Salah? If there is little time left for Salah and towards the end, the musalli misses out durood Ibrahim but reads the above Dua after At-Tahiyat would that be alright?

Answer:
Yes, you may read the above-mentioned dua or any dua (must be in Arabic) that does not resemble kalamul-naas (anything which can be asked from the creation, e.g., a car, house, etc.) after Durood e Ibrahim in Salah. In other words, the one praying can only make dua for those things that can only be sought from Allah (SWT), e.g., forgiveness, mercy, Paradise, etc.
Regarding your second question, the one praying should read in order and not deliberately omit the Durood e Ibrahim.
